Healthy alternative to banana nut bread. I also like to add 2 tsp. vital wheat gluten to the recipe - and prefer using the agave nectar over honey (it lowers the glycemic index).

Recipe Ingredients for Banana Nut Bread for Bread Machine

2 large eggs
1 oz. applesauce
1/4 c. canola oil
1/8 c. plain yogurt
2 medium bananas, mashed
2/3 c. honey or 1/3 c. agave nectar
1 1/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2/3 c. soy flour
1/3 c. whole wheat flour
1/3 c. bread flour
1 tbsp. ground flaxseed
1/2 c. chopped walnuts

Recipe Directions for Banana Nut Bread for Bread Machine

  1. Make sure all ingredients are at room temperature. Spray bread pan with non-stick spray.

  2. Mix eggs, applesauce, oil, yogurt, bananas, and honey/agave nectar together & pour into bread pan.

  3. Mix baking powder, baking soda, salt, flours, and flaxseed together then pour into bread pan on top of wet mixture.

  4. Sprinkle walnuts on top of flour mixture.

  5. Use the quick bread setting for your machine (takes about 2 hours from start to finish). Be sure to use the 'light' color setting because honey and agave nectar tend to brown more than granulated sugar.

  6. Allow bread to cool a little, then remove from bread pan.
