Recipe Ingredients for Banana-Nut Bran Muffins

2 large eggs
2/3 cups light brown sugar
3 medium bananas
1 cup skim milk
1 cup wheat bran
1/4 cup canola oil
1 tsp vanilla extract
1 cup whole-wheat flour
3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/3 cup walnuts
1/4 tsp salt

Recipe Directions for Banana-Nut Bran Muffins

  1. Preheat oven to 400. Coat 12 muffin cups with cooking spray and flour.

  2. Whick egss & brown sugar until smooth. Add mashed bananas, skim milk, wheat bran oil, and vanilla.

  3. Whisk whole-wheat flour, white flour, baking powder, baking soda, cinnamon and salt with the wet ingredients until well blended.

  4. Stir in walnut.

  5. Pour batter into muffin cups, they will be very full. Bake muffins until tops are golden brown (15-25 minutes) Let cool for 5 minutes, and set on cooling rack.
