Delicious all purpose healthy but yummy muffins. This analysis is for making 9 med sized muffins out of this recipe.

Recipe Ingredients for banana nut apple flax seed healthy whole wheat muffins

1 1/2 cups wheat flour
1/4 cups flour
1/2 cup pecan pieces
2 tsp baking powder
1/4 cup splenda
1/8 cup brown sugar
1/3 c flax seeds
2 small bananas
1 small apple
1 egg
3/4 cup plain soy milk

Recipe Directions for banana nut apple flax seed healthy whole wheat muffins

  1. You can vary the fruit and nuts. Use blue berries and walnuts, or just apples and pecans, etc. about 1c of fruit will do. For the best banana flavor, use over ripe, almost black skinned mushy bananas. You can throw the bananas in the freezer when you have let them get too ripe, and thaw them later for this recipe. Using splenda makes the color of the baked muffin a bit pale, use just sugar (1/3c) if you don't want to use splenda. You can omit the "smart balance margarine" or decrease the amount to lower the fat. You can decrease the amount of sugar for a less sweet muffin. dry pan fry the nuts and flax seeds first to add a "browned" flavor.
