High protein, high fiber. Can be made using gluten free oat flour & vanilla. optional- add 3 chocolate chips (can be vegan) to each muffin (adds 50 calories and 3 gr. fat /serving)

Recipe Ingredients for Banana Muffins- wheat free, gluten free, low fat, dairy free

3 bananas
3/4 c raw sugar
1 1/2 tsp vanilla
3/4 c oat flour
1/3 c oats
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 scoops protein powder

Recipe Directions for Banana Muffins- wheat free, gluten free, low fat, dairy free

  1. preheat oven to 375

  2. spray or line x-large muffin pan

  3. mash ripe bananas

  4. add sugar and vanilla

  5. mix dry ingredients together in another bowl

  6. add dry to wet

  7. stir only to moisten

  8. quickly spoon into muffin tins

  9. bake for 25-28 minutes, rotate after 15 minutes

  10. leave in pan for 5 minutes, then pop out and cool on a wire rack
