1 cup oatmeal 1 cup skim milk 3 mashed bananas 2 egg whites 3/4 cup wheat flour 1/2 cup splenda brown sugar (I use regular splenda here to reduce calories) 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt

Recipe Ingredients for Banana Muffins

1 cup dry Old Fashioned Quaker Oats
1 cup Pure Almond Original
3 medium banana Bananas
2 large Egg, White
0.75 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.5 cup, packed Sugars, Brown
1 tsp Baking Powder
0.5 tsp Baking Soda
0.5 tsp Salt, Table

Recipe Directions for Banana Muffins

  1. 1 cup old fashioned oatmeal

  2. 1 cup skim milk

  3. Mix these 2 and soak for 1 hour

  4. Then add

  5. 3/4 cup mashed bananas

  6. 2 egg whites, slightly beaten

  7. Mix these dry ingredients together then add to oatmeal mixture:

  8. 3/4 cup sifted wheat flour

  9. 1/2 cup Splenda brown sugar

  10. 1 tsp baking powder

  11. 1/2 tsp baking soda

  12. 1/2 tsp salt

  13. Mix batter then fill muffin cups. Bake at 400 degrees for 20 minutes.
