Banana Muffins Recipe

Low fat and very moist, and whole grain, too!

Recipe Ingredients for Banana muffins

2 1/4 cups mashed banana
1/3 cup sugar
3 tablespoons vinegar
1 3/4 cups white whole wheat flour
2 tsp baking soda
1/4 tsp baking powder

Recipe Directions for Banana muffins

  1. Mix banana, sugar and vinegar.

  2. In seperate bowl, mix flour, baking soda and baking powder.

  3. Quickly, and without overstirring, combine both bowls. (The vinegar and the soda will react and start the rising -- you don't want to burst all those bubbles!)

  4. Divide evenly into a 12-muffin silicone pan.

  5. Bake 20-25 minutes at 350 degrees.
