Muffins were good, but did not resemble ones that were made in the past.

Recipe Ingredients for Banana Muffins

1 1/4 cup wheat flour,brown,wholewheat
1 1/8 cup bananas, mashed
1/2 cup walnuts, chopped
1/2 cup sugar
1/3 cup shortening
2 tsp baking powder, double acting
1/8 tsp baking soda
1/2 tsp salt

Recipe Directions for Banana Muffins

  1. Mix shortening and sugar until mixture is smooth and all sugar is mixed in.

  2. Once this is done, mix in mashed bananas

  3. Mix dry ingredients separately in another bowl, sift together if possibl

  4. Add dry ingredients to wet in 3 divisions

  5. Chop and fold nuts into the mixture.

  6. Lightly spray muffin tray, fill muffin holes, and bake at 250 for approx. 20 min.
