Makes 18 medium-sized muffins. The riper the bananas, the less sugar is needed.

Recipe Ingredients for Banana Muffins

3 overripe bananas, mashed (by food processor)
2 eggs
1/2 cup butter (113g), melted
1 teaspoon vanilla
1 3/4 cup flour (245g)
3/4 cup brown sugar (150g)
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt

Recipe Directions for Banana Muffins

  1. Preheat oven to 350F (175C)

  2. Mix mashed banana, eggs, butter and vanilla together. Set aside.

  3. In a separate bowl, sift together flour, sugar, baking powder, baking soda, cinnamon and salt.

  4. Mix wet and dry ingredients together being careful not to over-stir.

  5. Pour into greased muffin tins and bake in oven for approximately 20 minutes or 60-65 minutes in a bread pan.
