USE OAT BRAN INSTEAD OF WHEAT BRAN IF YOU HAVE IT.

Recipe Ingredients for BANANA MUFFINS

1 1/2 cups all-purpose flour
1 cup wheat bran
1/2 cup whole wheat flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon allspice
2 eggs
1 cup apple juice
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup apple sauce
1 cup bananas, mashed
1/2 cup chopped walnuts

Recipe Directions for BANANA MUFFINS

  2. In a large bowl, combine the first eight ingredients. In another bowl, beat the eggs, juice, sugars and applesauce. Stir into dry ingredients just until moistened. Fold in bananas and nuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
