Recipe Ingredients for Banana Muffins

15 ounce can chickpeas
1 tablespoon vanilla extract
3 Banana
4 large eggs
1/2 cup agave syrup
1/4 cup almond milk
2 1/2 teaspoons baking soda
1 teaspoon baking powder
1 tablespoon white vinegar
1 teaspoon ginger
2 teaspoon cinnamon

Recipe Directions for Banana Muffins

  1. Mix everything except the baking powder, baking soda and vinegar with a blender or food processor. When it is all mixed and beans are fully pureed, mix baking powder, baking soda and vinegar in another bowl, then add to batter while fizzing and mix well.

  2. Makes 18 medium sized muffins.
