Low calorie, low fat muffins that are easy to make.There isn't a lot of sugar in the recipe and it mostly comes from the bananas, applesause, and molasses. Because it has a balanced amount of everything, this food can be eaten with either high or low glycemic foods to balance them out.

Recipe Ingredients for Banana Muffins

1 1/2 cups rolled oats
1/2 cup wheat bran or softened bran cereal
1/4 teaspoon salt
1/4 cup applesauce
1/4 cup blackstrap molasses
1/4 cup coconut
2 bananas
1 tablespoons baking powder
1 egg

Recipe Directions for Banana Muffins

  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin tins, or use muffin liners.

  2. In large bowl, combine applesauce, 1 egg, molasses, bananas, and vanilla until smooth. Add cinnamon if desired. Mix in oats, bran cereal, baking powder, and salt. Fold in coconut (or dried fruit, sliced nuts, etc.). Fill muffin liners halfway with batter. Sprinkle with sugar or sugar substitute on top if desired.

  3. Bake for 20 to 25 minutes in the preheated oven, until edges are light brown.
