just a quick recipe to get rid of some over-ripe bananas.

Recipe Ingredients for banana muffins

1/3 cup skim milk
1/4 cup vegetable oil
1 large egg
1 cup banana, mashed
2 cups all-purpose flour
1/2 cup brown sugar
2 tsp baking powder
1/2 tsp salt
6 oz butterscotch chips

Recipe Directions for banana muffins

  1. heat oven to 400 degrees F. spray bottoms of muffin tin (12 med. cups) with cooking spray.

  2. in lrg bowl, beat milk, egg, and oil until well mixed. mix in mashed banana.

  3. stir in all dry ingredients until flour is moistened.

  4. fold in butterscotch chips.

  5. bake 20-25 minutes.
