great way to use up very ripe bananas

Recipe Ingredients for Banana Muffins

2 cups self-raising flour
150 grams oat bran
3/4 cup caster sugar
2 eggs
3/4 cup whole milk
60 gram butter
2 ripe bananas

Recipe Directions for Banana Muffins

  1. Preheat oven 210C, lightly grease 12 hole muffin tray. Sift flour into a large bowl and stir in the aot bran and sugar. make a well in centre.

  2. mix together the eggs, milk, melted butter and mashed banana and pour into the well all at once. using a wooden spoon, stir until must mixed, do no overbeat, should be lumpy.

  3. spoon the mixture into the muffin holds. bake for 15 mins or until the muffins are puffed and golden brown. transfer to a wire rack to cool.
