Good use of overripe bananas. Freeze well.

Recipe Ingredients for Banana Muffins

1/2 cup shortening
1 cup sugar
2 cups flour
2 t baking powder
1/2 t salt
2 eggs
3 bananas, mashed
1/3 cup low fat buttermilk

Recipe Directions for Banana Muffins

  1. Cream shortening and sugar.

  2. Sift dry ingredients together; add to shortening mixture.

  3. In medium bowl, lightly beat eggs, add in mashed bananas and buttermilk.

  4. Gently stir into shortening/flour mixture.

  5. Scoop into muffin tins sprayed lightly with cooking spray.

  6. Bake at 350 for 20 minutes.

  7. Remove from oven when tops are golden brown. Let sit for 10 minutes, remove from pan. Wrap individually in plastic wrap, freeze.

  8. Defrost in microwave for 15 to 20 seconds.
