Delicious way to use up over ripe bananas

Recipe Ingredients for Banana Muffins

1/2 cup butter
1 cup sugar
1 egg
1 teaspoon baking soda
2 cups flour
2 medium bananas, mashed
1/2 cup walnuts

Recipe Directions for Banana Muffins

  1. Preheat oven to 350 degrees.

  2. Melt butter in microwave in a microwave safe bowl.

  3. Add sugar to butter.

  4. In a large bowl mash bananas with a fork.

  5. Add sugar and butter mixture to bananas.

  6. Add egg and beat slightly, then mix well.

  7. Measure out flour and add baking soda.

  8. Add to banana mixture and mix until just blended.

  9. Divide into greased muffin tin.

  10. Bake 30 minutes until golden brown.

  11. Wait 5 minutes and then remove from pan on to cooling rack.
