Wheat germ makes these a little healthier.

Recipe Ingredients for Banana Muffins

1 1/2 c flour
3/4 c sugar
1 T baking powder
3/4 t salt
3/4 c wheat germ
1 1/2 c bananas, mashed
1/2 c soy milk
2 eggs
1/3 c vegetable oil
1 t vanilla extract

Recipe Directions for Banana Muffins

  1. Line the muffin tray with cups.

  2. Sift the first four ingredients into a medium bowl. Stir in the wheat germ.

  3. Combine the bananas, milk, eggs, oil and vanilla in a large bowl. Whisk to blend. Add the dry ingredients.

  4. Spoon into the muffin cups.

  5. Bake until tops are golden, about 25 mins.
