Very moist muffins. Freeze well.

Recipe Ingredients for Banana muffins

1 1/2 c. banana, about 4 medium or 3 large
1/4 c. olive oil
1/2 c. egg substitute
1 1/2 t. vanilla
1 c. Splenda
2 c. flour
1 1/2 t. baking soda

Recipe Directions for Banana muffins

  1. Pre-heat oven to 350 degrees.

  2. With hand mixer combine oil and bananas.

  3. Then add everything except flour and baking soda. Mix well.

  4. Add batter to flour and soda. Stir 10 times to incorporate flour but not activate gluten. Let rest 5 minutes.

  5. Spoon into muffin pan. Bake until centers split.

  6. Let rest in pan on rack for 20-30 minutes before removing./
