Recipe Ingredients for Banana Muffins

1 1/2 cups Bananas, mashed
3/4 cup Splenda No Calorie
2/3 cup buttermilk, fat-free
4 oz. Applesauce
1/2 teaspoon vanilla extract
2 eggs
1 1/4 cups all-purpose flour
1 1/4 cups whole-wheat flour
3/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt

Recipe Directions for Banana Muffins

  1. Preheat oven to 350 degrees.

  2. Lightly grease muffin tins or line with paper cups.

  3. Place bananas, Splenda, buttermilk, applesauce, vanilla and eggs together in a large mixing bowl and beat with a wooden spoon until smooth.

  4. In a second bowl sift together flour, baking powder, baking soda, cinnamon and salt.

  5. Add dry ingredients to wet and mix until just combines. Do not over-mix or the muffins will be tough.

  6. Fill muffin cups full.

  7. Bake in oven for 25 to 30 minutes.

  8. A toothpick inserted in the center of the muffins will come out clean when they are cooked.

  9. Remove from the oven and cool before serving.
