Banana Muffins from the Betty Crocker's Cookbook

Recipe Ingredients for Banana Muffins

3/4 cup 1% milk
1/4 cup vegetable oil
1 large egg
2 cups 100% whole wheat flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
2 bananas

Recipe Directions for Banana Muffins

  1. Heat oven to 400 deg F. Prepare muffin tin.

  2. Beat together milk, oil, mashed bananas, and eggs. Amount of milk needed will vary with quantity and quality of bananas -- between 1/3 and 3/4 cups.

  3. Stir in flour, sugar, baking powder, salt, and spices all at once until flour is just moistened. Do not over-stir -- batter will be lumpy.

  4. Bake 20 to 25 minutes.
