Banana muffins using applesauce instead of margarine

Recipe Ingredients for Banana muffins

1/2 cup applesauce
5 medium bananas
1/2 cup sugar
1/2 cup egg white
100 ml yogurt
1 cup wheat bran
1 1/2 cups flour
1 1/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
2 tsp baking powder
1/2 tsp baking soda
1 cup blueberries

Recipe Directions for Banana muffins

Preheat oven to 350F. Mash bananas into applesauce, sugar and egg whites in a large bowl. Add dry ingredients except baking soda. Mix slightly. Mix baking soda into yogurt and mix into banana/flour mixture. Fold in blueberries. Spoon into muffin trays that have been lightly sprayed with low calorie vegetable spray. Bake approx 30 min.
