Banana muffins, no nuts. Makes 12 regular-sized muffins.

Recipe Ingredients for Banana Muffins

1 cup flour
1/2 cup brown sugar
1 egg
2 tbsp nonfat yogurt
1/2 tsp vanilla
2 bananas, mashed
3 tbsp unsalted butter, melted
3/4 tsp baking soda
1/4 tsp salt

Recipe Directions for Banana Muffins

  1. Combine flour, salt and baking soda.

  2. In separate bowl, combine all other ingredients.

  3. Fold wet ingredients into dry ingredients until just combined.

  4. Spoon into prepared muffin cups.

  5. Bake 11-13 minutes until a toothpick inserted into the middle of one muffin comes out clean.

  6. Allow to cool slightly before removing from muffin tin.
