Recipe Ingredients for Banana Muffins

4 large bananas
1/2 cup white sugar
1 egg
1/3 cup butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cups unbleached flour
1 cup whole wheat flour
3 tbsp flax seed
1/2 cup dark chocolate chips
1/4 cup chopped walnuts
1 tsp vanilla extract

Recipe Directions for Banana Muffins

  1. Mix the mashed banana, sugar, egg, vanilla extract, and melted butter together. Set aside.

  2. Mix in together baking soda, baking powder, salt and flours.

  3. Pour in chocolate chips, walnuts, and flax and mix just until incorporated.

  4. Pour into papered muffin tin, and bake in 350 degrees F oven for 20 to 25 minutes.
