Recipe Ingredients for Banana Muffins

67 g self raising flour
1/2 tsp baking powder
1/3 tsp baking soda
1 pinch salt
1 egg
20 g sugar
10 g brown sugar
1 tbsp honey
1/3 tsp vanilla extract
1/3 cup Olive Oil Canola Extra Virgin Olive
1 banana
1 tbsp lemon juice

Recipe Directions for Banana Muffins

  1. Mash banana and add lemon juice- set aside

  2. Mix first four ingredients- set aside

  3. Beat the eggs and the sugar with an electric whisk in a separate bowl until it reaches the ribbon consistency.

  4. Add vanilla and honey. And mix till combined

  5. Add oil into the mixture and mix on high for 2 minutes

  6. fold in the flour into the egg mixture .

  7. Stir in the banana

  8. Place them into muffin tins and bake till toothpick comes out clean.
