Modified Recipe - No Fat, Low Sugar

Recipe Ingredients for Banana Muffins, No Fat, Low Sugar

1 1/2 cups all-purpose flour
1/3 cup brown sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 egg whites
1 cup bananas, mashed
1/4 cup applesauce
2 tsp Twin Sugar or Splenda

Recipe Directions for Banana Muffins, No Fat, Low Sugar

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. In a large bowl, stir together flour, brown sugar, Twin/Splenda, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce and vanilla extract. Stir just until combined. Pour batter into muffin pan.

  3. Bake in preheated oven for 18-20 minutes.
