You will not believe that these are gluten free muffins. They have the same texture as muffins made with wheat, thanks to xanthan gum.

Recipe Ingredients for Banana Muffins (Gluten Free)

4 medium (7" to 7-7/8" long) Bananas
316 grams Rice Flour, Brown
1 Teaspoon Baking Powder
1 tsp Baking Soda
4 3/5 grams Cinnamon, Ground
1 large Egg, Whole
0.25 cup, packed Sugars, Brown
4 tbsp Honey Squeezable
10 grams No Calorie Sweetener
4 tbsp Nutella Hazelnut Spread
0.25 cup Almonds Sliced
8 figs California Mission Figs
1 tbsp Butter
0.5 tbsp Xanthan Gum

Recipe Directions for Banana Muffins (Gluten Free)

  1. Combine dry ingredients (flour, xanthan gum, baking powder, baking soda, salt, cinnamon) in a small mixing bowl.

  2. Mash bananas in the base of a standing mixer bowl.

  3. Place mashed bananas under mixing blade.

  4. Add sugar, sweetener, egg, vanilla, and butter to mixer. Mix until combined.

  5. Slowly add flour mixture into wet ingredients in standing mixer. Combine just until all the flour is moist.

  6. With the mixer on low speed, add in nuts and dried fruit.

  7. Evenly distribute Nutella spoonfuls in the bowl. Mix for just a few turns, then stop.

  8. Transfer batter to greased muffin tins.

  9. Bake at 350 degrees F for 40 to 45 minutes, or until knife inserted in muffin center comes out clean.

  10. Serve warm with a dab of honey, butter, Nutella, or peanut butter.
