This recipe uses light margarine, Splenda, whole wheat flour, and egg substitute for a healthier twist. Makes 1 loaf or 12 muffins.

Recipe Ingredients for Banana Muffins/Bread

1 cup milk
1 tbsp lemon juice, freshly squeezed (about 1 wedge)
2 cups all-purpose flour
3/4 cup whole-wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/2 cup light margarine
1/10 cup sugar (NOTE: use 3/4 cup Splenda)
50 g egg substitute (or 1 egg)
2 tsp vanilla
3 bananas, very ripe and mashed

Recipe Directions for Banana Muffins/Bread

  1. Preheat oven to 350 degrees

  2. Line 12 muffin cups or butter a loaf pan/line with parchment paper

  3. In measuring cup, whisk milk with lemon juice and set aside

  4. In a bowl, combine flours, baking powder and soda, salt, and cinnamon

  5. In large bowl, beat butter and sugar until light (with an electric mixer if possible); beat in egg and vanilla until blended, then bananas

  6. With a wooden spoon, stir in flour mixture alternately with milk mixture into banana mixture, just until combined

  7. Spread into prepared loaf of muffin pan

  8. Bake for 20 minutes for muffins, 60-70 minutes for a loaf, or until toothpick inserted comes out clean

  9. Let cool in pan on rack for 5 minutes, then directly on rack to cool completely
