Yummy muffins - with or without blueberries

Recipe Ingredients for Banana Muffins with blueberries

2 ripe bananas
1/2 cup white sugar
6 tbsp margarine
1 egg
1/2 tsp vanilla
1 1/2 cup all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup blueberries

Recipe Directions for Banana Muffins with blueberries

  1. Into a mixing bowl, break up the bananas

  2. Add the shortening and sugar and beat until blended

  3. Add the egg and vanilla and beat in.

  4. Meaure flour, baking soda, baking powder and salt into another bowl and mix together

  5. Dump measured flour mixture into banana mixture

  6. Stir just until moistened

  7. Add blueberries and gently mix - Do not overmix

  8. Bake at 350 degrees for 18- 20 miutes

  9. Serve hot or cold.
