Banana Muffins with Applesauce Recipe

This is a low-fat version of the Joy of Cooking's Banana Bread Cockaigne, that I make as muffins instead of bread, and add raisins (but you could add nuts, dried fruit, coconut, whatever).

Recipe Ingredients for banana muffins w/applesauce

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoons salt
3 medium bananas, mashed
2 large eggs
0.33 cups unsweetened applesauce
0.67 cups brown sugar
1/2 cups raisins

Recipe Directions for banana muffins w/applesauce

  1. Mix flour, baking powder and salt in a bowl.

  2. Beat sugar and applesauce in another bowl.

  3. Add eggs and mashed bananas. Beat until smooth.

  4. Add flour mix 1/3 at a time, beating until smooth.

  5. Fold in raisins.

  6. Bake at 350F until golden brown.

  7. Let cool completely before eating, or muffin will come apart on the muffin paper.
