Elisa's heavenly banana muffins (1 c. nuts optional)

Recipe Ingredients for Banana muffin

5 bananas
1/3 cup butter
3/4 cup sugar
1 egg
1 tsp vanilla
2 tsp ground coffee
1 tsp baking soda
1 1/2 cups whole wheat flour
1 tsp cinnamon
1 pinch salt

Recipe Directions for Banana muffin

Preheat oven to 350. Mix melted butter into smashed bananas. Add beaten egg, sugar, coffee, and vanilla. Mix flour, salt, soda, and cinnamon. Add to liquid mixture until just incorporated. Pour into muffin tins lined with paper cups; bake 25-30 mins.
