As I LOVE muffins I wanted to make them into more of a snack size so that I could eat a couple and not feel guilty.

Recipe Ingredients for Banana Muffin "Cookies"

1/2 cup all purpose flour
1/2 tbs baking powder
1/4 tsp baking soda
1 dash salt
1/2 cup bananas, mashed
1/8 cup sugar
1/8 cup unsweetened applesauce
1 egg white
2 tsp vanilla extract

Recipe Directions for Banana Muffin "Cookies"

  1. Preheat oven to 350 degrees

  2. place a sheet of aluminum foil on a baking sheet and spray with nonstick cooking spray

  3. Put a small overly ripe banana into a large zip lock bag and smash it up completely. Add the other wet ingredients to the bag and keep on squishing until well mixed add the rest of the ingredients to the zip lock and squish until well mixed.

  4. Cut the edge of the zip lock and "pipe" the muffin mix onto the baking sheet making 8 cookies.

  5. Bakes in 8-10 minutes.
