Yummy muffins reworked with eggbeaters to lower cholesterol and natural honey I have on hand (and craisins instead of coconut)

Recipe Ingredients for Banana Mish-Mash Muffins reworked

1 1/2 c rolled oats
3/4 c bran cereal, moistened
1/4 tsp salt
1/4 c applesauce
1/4 c honey
1/4 c craisins
2 bananas
1 tsp. vanilla
1 tbsp. baking powder
1 egg

Recipe Directions for Banana Mish-Mash Muffins reworked

  1. Mash bananas in a large bowl.

  2. Add applesauce, honey, vanilla and egg. Mix well. Some lumps of banana are OK.

  3. Add oats, bran, salt and baking powder. Mix well.

  4. Fold in craisins.

  5. Fill muffin tins 1/2 full. Recipe makes 16 muffins for me.
