This is a tripled Banana Bread recipe made to make small mini muffins.

Recipe Ingredients for Banana Mini Muffins

2 3/4 cups whole wheat Flour
2 1/2 cups all purpose flour
3 3/4 tsp baking powder
1 1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
3/4 tsp sea salt
1 cup In the Raw Zero Calorie Sweetener
1 cup sugar
1/4 c smart balance butter
2/3 cup butter
1/4 cup applesauce unsweetened
1 1/2 cups egg beaters
6 tbs almond milk unsweetened
8 Banana
1 cup Chopped Walnuts
1 cup semi sweet chocolate chips
3/4 cups Cranberries Dried Fruit

Recipe Directions for Banana Mini Muffins

  1. Stir together dry ingredients and set aside.

  2. Beat sugar and shortening till light and smooth.

  3. Add egg substitute and milk 1/4 cup at a time beating till smooth after each addition.

  4. Alternately add dry mix and bananas to creamed mixture, beating till smoothafter each addition.

  5. Stir in nuts, chocolate chips and or dried fruit.

  6. Bake mini muffins at 350 for 16-18 minutes till toothpick comes out clean.
