Recipe Ingredients for Banana Mini Muffins

2 large (8" to 8-7/8" long) Bananas
1 cup Sugars, Granulated
0.25 cup Vegetable Oil, Canola
0.5 cup Cream, Sour, Reduced Fat, Cultured
2 eggs Egg, Scrambled
1.5 cup Flour, All Purpose
1 Teaspoon Baking Powder
1 tsp Leavening Agents, Baking Soda
0.5 tsp Salt, Table

Recipe Directions for Banana Mini Muffins

  1. Preheat oven to 325

  2. Mix bananas, sugar, oil, sour cream and eggs in a large bowl.

  3. In a separate bowl, mix flour, baking soda, baking powder and salt.

  4. Add the dry mix to the wet mix.

  5. Divide batter into mini muffin cups/pan.

  6. Bake until toothpick comes out clean (about 30 minutes)
