Lowfat banana muffins with or without the nuts

Recipe Ingredients for Banana mini muffins

1 cup wholewheat flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/8 teaspoon salt
2 large bananas, mashed
3/8 cup white sugar
1/8 cup honey
1 egg white
2 tablespoons butter, melted
1/4 cup apple sauce
1/3 cup walnuts, chopped

Recipe Directions for Banana mini muffins

  1. 1 cup all-purpose flour

  2. 3/4 teaspoon baking powder

  3. 3/4 teaspoon baking soda

  4. 1/4 teaspoon salt

  5. 2 large bananas, mashed

  6. 1/2 cup white sugar

  7. 2/3 egg

  8. 3 tablespoons and 1-3/4 teaspoons butter, melted

  14. This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 12 muffins, or 48 mini muffins.

  15. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.

  16. Combine bananas, sugar, honey, egg, apple sauce and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Stir in nuts. Scoop into muffin pans.

  17. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.
