Banana muffins with mini semi-sweet chocolate chips.

Recipe Ingredients for Banana Mini-Chip Muffins

2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup light butter, softened
1/3 cup SPLENDA Sugar Blend
1/3 cup SPLENDA Brown Sugar Blend
1 tsp vanilla extract
1 cup mashed bananas
1 large egg
6 ounces semi-sweet mini chocolate chips

Recipe Directions for Banana Mini-Chip Muffins

  1. Preheat oven to 350 degrees. Spray muffin tins with nonstick cooking spray and set aside.

  2. Combine flour, baking powder and salt in medium bowl and set aside.

  3. Combine butter, Splenda, Splenda Brown Sugar Blend, and vanilla in large bowl; beat at medium speed until creamy. Beat in bananas and egg. Gradually mix in flour mixture; stir in chocolate chips. Spoon batter evenly into prepared pan, filling cups 2/3 full.

  4. Bake 15-20 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pans on wire rack. Remove muffins from pans to wire rack to cool completely.
