Recipe Ingredients for Banana loaf

2 bananas
2 ounces margarine
5 ounces granulated sugar
2 eggs
8 ounces self raising flour
1 pinch salt

Recipe Directions for Banana loaf

  1. Mash bananas

  2. cream margarine and sugar

  3. beat the eggs

  4. add flour, salt and banana and mix well

  5. put in a greased and floured 1 1/2 loaf tin, or slightly larger.

  6. Bake in middle of the oven, gas mark 5,

  7. 190 c, for about 1 hour, until loaf is golden brown, springy to touch and shrinking from the sides of the tin.

  8. Turn loaf out on to a wire rack and cool.
