Recipe Ingredients for Banana Loaf

1 2/3 cup caster sugar
2/3 cup melted butter
2 eggs
1/3 cup milk
1 tbsp white vinegar
1 1/2 tspn bicarbonate of soda
1 1/2 tspn baking powder
2 1/2 cups wheat flour, strong wholegrain
1/2 tspn salt
3 bananas
1 cup nuts, diced or oats

Recipe Directions for Banana Loaf

  1. Cream together the sugar, melted butter and 2 eggs until light and fluffy.

  2. Mix in the milk, white vinegar, bicarbonate of soda, baking power, flour and salt

  3. Mash up 3 large bananas and chopped nuts or oats and add to the mixture.

  4. Pour into a greased and floured loaf tin.

  5. Bake at 375 F/ 190 C for 1 hour

  6. (Cover with foil for the last 20 minutes)
