I didn't have much flour so I ground up barley flakes in the blender and used those. Use carob chips in place of chocolate chips.

Recipe Ingredients for Banana Loaf

1 3/4 cups barley
1/4 cups flour
2 bananas, mashed
1 tsp baking soda
1/2 cup butter, salted
3/4 cup brown sugar
2 1/2 oz chocolate
1/4 tsp salt
1 egg

Recipe Directions for Banana Loaf

  1. sift dry

  2. cream butter and sugar, add egg and beat well

  3. add mashed banana to wet

  4. add dry to wet

  5. fold in carob/chocolate chips

  6. bake 325 for 50 mins
