A great dip for Sweet Potato Fries. I leave out the rum and seldom use the corn syrup but wanted to put the original recipe up

Recipe Ingredients for Banana Ketchup

1/2 c Golden raisins
1/3 c Chopped Onion
2 cloves Garlic
1/3 c Tomato sauce
1 1/3 c Cider vinegar
4 bananas, very ripe, peeled and cut into chunks
3 cups water
1/2 c Brown sugar packed
1 1/2 t Salt
1/2 t Cayenne pepper
1/4 c Light corn syrup
2 t Ground allspice
3/4 t Ground cinnamon
3/4 t Freshly grated nutmeg
1/2 t Freshly ground black pepper
1/4 t Ground cloves
2 T Dark rum

Recipe Directions for Banana Ketchup

  1. Combine the raisins, onions , garlic, tomato paste and 1/3 cup

  2. vinegar in the container of a food processor., Process the mixture

  3. until smooth. Transfer the mixture to a large, heavy saucepan.

  4. Add the banana chunks and another 1/3 cup vinegar to the food

  5. processor container. Process the mixture until smooth. Transfer the

  6. banana mixture to the saucepan. Add the remaining 2/3 cup vinegar, 3

  7. cups water, brown sugar, salt and cayenne pepper.

  8. Bring the mixture in the saucepan to a boil over medium-high heat,

  9. stirring frequently. Reduce the heat to low and cook the ketchup,

  10. uncovered, stirring occasionally, for 1 1/4 hours. If the ketchup

  11. threatens to stick to the bottom of the pan at any point, add some of

  12. the remaining water, up to 1 cup.

  13. Add the corn syrup, allspice, cinnamon, nutmeg, pepper and cloves to

  14. the ketchup. Cook the ketchup over medium-low heat, stirring

  15. frequently, for 15 minutes longer, or until it is thick enough to

  16. coat a metal spoon. Stir in the rum. Remove the ketchup from the

  17. heat and let it cool a few minutes.

  18. Force the ketchup through a fine sieve to strain it, pressing down

  19. hard on the solids. Remove the ketchup from the heat and let it cool

  20. to room temperature. Store the banana ketchup, covered in the

  21. refrigerator for up to 1 month.

  22. Makes about 3 1/2 cups.
