Whole fruit and whole grain muffins

Recipe Ingredients for Banana Flax Muffins

1/4 cup nonfat yogurt
1/4 cup milk, lowfat
1 banana
8 dates, chopped
1/4 cup safflower oil
2 large eggs
1/2 cup flaxseed meal
3/4 cup spelt flour
1/4 cup oats
1/4 cup wheat germ
2 tbsp millet
1/2 cup whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips (optional)

Recipe Directions for Banana Flax Muffins

  1. Line 12 regular muffin tins with paper liners.

  2. Preheat oven to 350 degrees.

  3. Note: Can use 1/4 cup oat bran instead of oats and 1/2 cup oat flour instead of whole wheat flour.

  4. Blend wet ingredients (first 6 items) in food processor. Combine dry ingredients in separate bowl, then add to processor and blend just until combined. Stir in chocolate chips.

  5. Spoon batter into prepared muffin tins.

  6. Bake muffins for 25-30 minutes, until nicely browned and toothpick inserted in center comes out clean.

  7. Cool muffins on wire rack.
