Fruit-sweetened, moist bread w/o eggs or dairy

Recipe Ingredients for Banana Date Nut Bread

10 1/2 oz tofu
1 cup mashed bananas
1/4 cup apple juice
2 tsp vanilla
1/2 tsp nutmeg
1 1/2 cups whole wheat flour
1 tbsp baking powder
1 cup sugar
1 cup chopped dates
1/2 cup chopped walnuts

Recipe Directions for Banana Date Nut Bread

  1. Mix tofu bananas, juice, vanilla, nutmeg and oil in food processor till smooth

  2. Mix flour, sugar and baking powder in bowl

  3. Add wet mixture to dry and mix

  4. Add dates and walnuts

  5. Pour into oiled and floured loaf pan

  6. Bake 40 minutes at 350 degrees or until toothpick comes clean
