Recipe Ingredients for Banana Date HUGE Muffin

3/4 cups spelt flour
15 grams wheat bran
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
80 grams bananas, mashed
1/8 cup brown sugar
40 grams dates
2 egg whites
1 tbls canola oil
15 grams light sour cream

Recipe Directions for Banana Date HUGE Muffin

  1. 1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners.Blend all dry ingredients.

  2. 2. Combine bananas, sugar, egg, and oil and sour cream in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.

  3. 3. Bake in preheated oven. Bake for 25 minutes, if 6 large muffins.
