Makes 8 servings



Not a low fat banana bread version, but you can always substitute butter and sugar with low fat oils and honey. Same thing with flour, if you need you can use gluten free flour instead of normal flour.

Recipe Ingredients for Banana and currant bread

4 medium (7" to 7-7/8" long) Bananas
1/3 cup unsalted butter
1 teaspoon vanilla essence
3/4 cup brown sugar
1 egg
1 gram salt
1 teaspoon baking soda
1 1/2 cups all purpose flour
1/4 cup currants

Recipe Directions for Banana and currant bread

  1. Preheat oven to 180C (350F)

  2. Mash 4 bananas.

  3. Add 1/3 cup melted Butter and stir.

  4. Add 3/4 cup sugar, 1 egg and 1tsp vanilla; mix well.

  5. Add 1tsp baking soda and pinch salt, gently stir.

  6. Add 1 1/2 cups flour and mix well.

  7. Place in medium size, greased baking pan.

  8. Cook for 1 hour
