Egg-free, dairy-free cupcakes. Makes enough for 2 cake pans or 48 cupcakes.

Recipe Ingredients for Banana Cupcakes (double recipe)

6 c. cake flour
3 1/2 c. sugar
2 1/2 c. water
1 c. shortening
3 tsp. vanilla
2 bananas
1 1/2 tsp. baking soda
6 tsp. vinegar
2 tsp. salt

Recipe Directions for Banana Cupcakes (double recipe)

  1. Pre-heat oven to 350

  2. Mash bananas in small bowl and sprinkle with 1/2 teaspoon of baking soda. Pour 2 teaspoons of vinegar over mixture and mix until smooth.

  3. Mix remaining baking soda and vinegar in separate bowl. Set aside.

  4. Combine flour, sugar, and salt in large bowl.

  5. Add shortening, banana mixture, and vanilla.

  6. Add vinegar/baking soda mixture.

  7. Mix until cake batter consitency is achieved.

  8. Pour into 2 cake pans.

  9. Bake until inserted toothpick comes out clean.
