Cupcake version of a Banana cake recipe.

Recipe Ingredients for Banana cupcake

125 g butter, softened
1 1/2 cups sugar
1 cup banana, mashed
1/2 teaspoon vanilla extract
2 large eggs
100 ml whole milk
2 teaspoon lemon juice
1 1/2 cups flour
3 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (if using unsalted butter)

Recipe Directions for Banana cupcake

  1. Preheat over to 160 Celcius if using fan-forced oven, or 180 Celcius if not. Grease and flour cupcake tins or line with paper cups.

  2. Add 2 teaspoons lemon juice to 100ml whole milk to make buttermilk. Let curdle for 10 minutes.

  3. Place butter, banana, vanilla and eggs in food processor or mixer.

  4. Process 2 minutes. Scrape down sides of processer. Add buttermilk and pulse to combine.

  5. Sift flour, salt (if using), and baking soda together in a large bowl. Add flour mixture to food processor and process until just combined.

  6. Pour batter into cupcake pan.

  7. Bake 15-20 minutes, or until toothpick inserted into centre comes out clean.

  8. Let cool on a wire rack.

  9. Spread cooled cupcakes with cream cheese icing. Store in airtight container in refrigerator
