I had 4 bananas that needed using, so I looked in my cupboards, and I came up with these ingredients. This makes 12 muffins, which are tasty, moist and, best of all, relatively low in carbs. I can't use flour, so I used ground almonds, and they turned out great. I put maple syrup because the syrup I used, Agave, wasn't in the database.

Recipe Ingredients for Banana, Cranberry & Nutmeg Ground-almond Muffins

75 g Margarine, light (or Clover Light)
228 g Ground Almonds
282 g Banana, ripe (or 4 Bananas)
94 g Egg, whole (2 medium)
50 g Cranberries, dried
14 g Maple Syrup (I used Agave Syrup)
10 g Lemon Juice, concentrated
16 g Baking Powder (2 level tsps)
1/2 tsp Nutmeg

Recipe Directions for Banana, Cranberry & Nutmeg Ground-almond Muffins

  1. Pre-heat oven to 350F/ 180C/ Gas 5.

  2. Place the margarine, syrup & beaten egg in a large mixing bowl, then sift in the baking powder, and gently pour in the ground almonds.

  3. In another bowl, slice the bananas, and mash to a pulp, either with a fork, or an electric mixer.

  4. Now, using the mixer, whisk the fat, syrup, ground almonds & beaten egg together until thoroughly combined - don't worry if the mix looks a little dry at this stage.

  5. Next, add the lemon juice and nutmeg, followed by the mashed banana and cranberries, and whisk again thoroughly.

  6. Transfer the mix to a 12-cup muffin tin, layering each cup with a paper case first, and level the mix in each cup.

  7. Bake in the oven for 20-25 minutes, until golden & well risen.

  8. Leave to cool on a wire rack.

  9. Store in a cool, dry and airtight container.
