Recipe Ingredients for Banana Cranberry Muffins

2 bananas, plus 1 for garnish (more if making mini muffins)
1/2 cup light-brown sugar
2 tbsp canola oil
1/2 egg
1/4 cup all-purpose flour
3/4 cup whole-wheat flour
1/4 cup flaxseed
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup yogurt, lowfat
1/2 tablespoon pure vanilla extract
1/4 cup cranberries, dried

Recipe Directions for Banana Cranberry Muffins

  1. mash bananas, add liquid ingredients to mix

  2. mix dry ingredients

  3. incorporate mixing just till combined and all wet

  4. fill muffin tins to 2/3 filled

  5. bake on 350 for 20 minutes for mini muffins or animal tins

  6. 25 or so for full muffins
