Delicious, low cal use for over-ripe bananas. Add fruit and/or nuts for added nutrients and protein. I'm experimenting with alternative flours and this mix worked well! Yippee!

Recipe Ingredients for Banana Cornmeal Muffins

1 cup Cornmeal, Degermed, Enriched, Yellow
0.5 cup Soy Flour
0.25 cup Wheat Bran, Crude
2 medium (7" to 7-7/8" long) Bananas
1/2 cup Applesauce - Unsweetened
1 tsp, whole Flaxseed
15 grams Oats, Regular And Quick And Instant, Unenriched, Dry
1 tbsp Xylitol
1 large Egg, White
1 tbsp Vanilla Extract
4 tbsp Honey Squeezable
1 tsp Baking Powder

Recipe Directions for Banana Cornmeal Muffins

  1. Preheat oven to 360.

  2. Mix all dry ingredients together.

  3. Then stir in wet ingredients, making sure to mash banana well.

  4. Separate batter into 12 cup muffin tin.

  5. Bake for 15 to 20 minutes or until done!
