Recipe Ingredients for Banana & Coconut "Toads"

30 g wholewheat flour
40 g plain flour
18 g dessicated coconut
15 g brown sugar
1 pinch cardamom
1 pinch salt
100 g banana, mashed
1/2 tsp baking powder
1 1/2 tbsp water
1/4 cup canola oil (1/2 cup used but only 1/4 cup was absorbed during frying)

Recipe Directions for Banana & Coconut "Toads"

  1. Heat oil in a small frying pan/chip pan.

  2. Mix all ingredients (except oil) together to form a paste/thick batter.

  3. When oil is hot, cook in batches by dropping abt 5 teaspoonfuls into the oli at one time. Cook until evenly browned all over. Adjust the heat between medium & low-medium as the oil gets hotter & cooler. If the oil gets too hot, the "toads" will get burned on the outside and not cook evenly on the inside.

  4. Drain well on kitchen paper and serve warm.
