Morning breakfast that is portable (I have two with coffee). Best when microwaved for 20 to 30 seconds.

Recipe Ingredients for Banana Coconut Muffins

1 1/2 cups oat bran
1 cup whole wheat flour
1 cup flax seed meal
1 cup wheat germ
2 tablespoons baking powder
1 1/2 tablespoons cinnamon
1/2 teaspoon salt
1 pound bananas
1/4 cup canola oil
1 ounce dark molasses
23 ounces skim milk
2 large eggs
1/2 cup dark brown sugar
1 tablespoon vanilla
1 cup coconut

Recipe Directions for Banana Coconut Muffins

  1. Preheat oven to 375 degrees.

  2. Spray muffin pans with canola oil.

  3. Whisk together dry ingredients in a very large bowl.

  4. Combine next group of ingredients in a blender and process until smooth.

  5. Pour wet mixture into bowl of dry mixture; add the coconut flakes and stir just until combined.

  6. Spoon into muffin pans (24 medium muffin cups).

  7. Bake for ~ 18 minutes.

  8. Cool in pans for at least five minutes.
